Chef K Ganesh
Winner of the title ‘Best Executive of the Year’ by Guestline Hotels and Resorts, Chef K. Ganesh is an alumni of the Institute of Hotel Management, Catering and Nutrition, Ahmedabad, Gujarat. He also has a 3 year Diploma in Hotel Management, Catering and Nutrition to his credit. He began his professional career rather interestingly by training at some of the local and world’s best culinary places. Forty-five days at Hotel Capo Reamol, Limone sul Garda, Italy; sixty days in Food and Beverages Controls, WG Park Sheraton, Madras and seven days in technique and production at Italian Institute for Advanced Culinary and Pastry Arts, Calabria, Southern Italy is what he began his glorious career with!
Apart from mastering his own regional cuisine of South India, he also has specialization in cuisines like Italian, Continental, Bakery & Confectionery, Butchery, Garde Manger, French, Mexican, Indian, Mughlai and Tandoori, which truly makes him chef extraordinaire.
Beginning his career as a Kitchen Executive Trainee in 1987, he worked for two years for management training in all the departments and the various sections of kitchens in different hotels with the India Tourism Development Corporation’s Ashok Training Center, New Delhi. Then, after serving as a Chef for four years as an overall in charge of the food and beverages department at Hotel Madurai Ashok, Madurai, Tamil Nadu; he went on to become the Executive Sous Chef/Sous Chef and F&B Manager in the year 1992 for Hotel Guestline, Tirupati, Andhra Pradesh. Here, he planned, co-ordinated, directed and controlled the overall operation of all the kitchens alongwith assisting in the project procurement of kitchen equipment, manpower planning, recruitment and setting up of systems and procedures.
Just after this, he moved onto become the Executive Chef at Guestline Hospitality Management and Development Services Ltd, Hotel Guestline, Juhu, Mumbai. Besides handling the usual duties with finesse, he was also responsible for complete planning, implementation and launching of the Rooftop Italian restaurant.
In 1998, Ganesh was promoted by well-known fashion designer Wendell Rodricks and French gastronome Jerome Marrel as an Executive Chef cum Head of Operation for Retreat 'n' Style India Pvt Ltd, Sorpo's - The Haute Cuisine Restaurant, Panjim, Goa. July 1999 had Gourmet Concepts, Mumbai call him as a Food Consultant/Consultant Chef (Proprietor). Henceforth, from 2006 he had been the Owner/Promoter of Nehmal Hospitality Management (Brand: Zen/Haute Udipi/ExpressMeals/Masala Chowk), Mumbai till date. He also became the Promoter Director – Technical for Drums Food International Pvt Ltd, (Brand: Hokey Pokey) Mumbai and is still continuing to serve it.
Chef Ganesh has had the honour of getting nominated for the H&FS award for the ‘Best Executive Chef of the Year’, continuously for the years 1996 and 1997.
Achievements
Conducted food festivals and promotions like South Indian Food Festival, Retro Food Festival, Pasta Festival, Hyderabadi Food Festival, Mango Festival, Goan Food Festival, Seafood Festival, etc.
He is responsible for the exclusive diet catering to Femina Miss India contestants – 1996, 1997. Also, the launch party of Anuradha Mahindra's ‘Verve’ and Meher Castelino's ‘Fashion Kaleidoscope.’
He has featured as the 'Chef of the Week' in The Sunday Observer and as the judge in the Recipe Contest for ‘Savvy’ in August 1995.
Featured in Saturday Times, Bombay Times and other leading newspapers in appreciation of the food.
Provided food styling and Italian and South Indian Gourmet sections for Femina Magazine.
Hosted cookery shows in leading channels like FoodFood, Sony TV and Home TV. He also has credits of catering to VIPs, celebrities, dignitaries, film stars, etc.
