Chef Extraordinaire : If it were not the knife, it would’ve been the brush; for what difference can a tool make when you are born an artist — no matter what you use, it is finally all about your self-expression.
Chef Saby’s highest accolade is the “Best Chef of India”, Awarded by the then President of India, H.E. Pratibha Patil, National Tourism Awards 2011, interestingly the Youngest Chef in India to receive this award, given to only three other Chefs in the past.
Chef Sabyasachi Gorai a.k.a Saby, among friends and patrons, has packed in a century of culinary expertise in his career spanning two decades. Starting at Hotel Guestline (Accor) Mumbai and subsequently at Mahindra Holiday Resorts across India, he became the Youngest Executive Chef, at 26, of South East Asia’s largest entertainment centre “The Bowling Company,” at Mumbai, 1999. Continuing his success stories, he became the Executive Chef at Bellissima, Liquid Lounge and Karma at Mumbai in 2001, catering to the best names like Amitabh Bachchan, Azim Premji, the Kapoor Family, Nirmal Zaveri, Anil Ambani and many more. He was the first Chef in India to introduce “The Tasting Menu” at Bellissima, the Fine Dine outlet serving New World Cuisine. Simultaneously he set up and managed the massive Food Court at Dhirubhai Ambani Knowledge City serving more than 5000 meals a day.
In 2005 he moved to New Delhi to head the North Indian operations and growth for the Olive Group based out of Olive at the Qutab. Subsequently he started Olive Beach, AI – The Japanese Restaurant, LAP –The Club and The Moving Kitchen by Olive (Outdoor Catering). He served the company as a Culinary Director of all these Units till 2012. Chef Saby has helped in opening other Olive Branches across the country. He has also spent many years training, travelling and researching across different parts of the world honing his skills and knowledge in different cuisines.
His latest Success Stories are the Launch of the Olive Culinary Academy, New Delhi, India in 2013 and the phenomenal response to “Soda Bottle Opener Wala”, the Bombay Irani Café, at DLF Cyber Hub, Gurgaon, India. He now owns and runs a Boutique Consultancy Company, out of New Delhi, India, called Fabrica by Chef Saby.
Just 40, Chef Saby’s kitty overflows with awards won for the many restaurants he has worked for, as well as for himself.
Most recently he has been awarded the Silver Hat, presented by the Indian Culinary Forum, the largest Representative Body of Chefs in India, at their 10th Annual Chef’s Awards function in November 2013. Dr. Shashi Tharoor, Hon'ble Minister Of State for Human Resource Development, Government of India, crowned Chef Saby amidst 700 Elite Hospitality Professionals.
Chef Saby’s biggest International achievement came when he won the Award “Best Chef of India” at Varli Awards New York, presented by Chef Sanjeev Kapoor. Held in November 15, 2012 at New York City, Varli chose Chef Saby to be its first recipient to be recognized with this coveted award in the Global Platform.
A Premier Hospitality Magazine in India, “Food and Nightlife” in the International category, awarded Chef Saby, “The Best International Chef in India” which is yet another remarkable milestone in his culinary career.
Hailing from Asansol in West Bengal, his food has melted many hearts and won accolades far and wide. Chef Saby’s culinary art and craft are inspired by greats like Late Charlie Trotter, Tetsuya, Neil Perry and Pierre Gagnaire. The ingredients that excite him? “Anything and everything” he says. Cooking is not about secret ingredients and special recipes for him. It is all about a passion and love for honest and soulful food.
Does he have any favorite when it comes to whipping up dishes? “I cook anything as long as my guest loves it” That’s quintessential Chef Saby for you: honest, dedicated and hardworking. The Chef who pours his heart into the cauldron and blends it in with the ingredients to present a work of art on your plate — over and over, every time.
Starting 14th November, 2013, Chef Saby features in and as “The Urban Cook” on the vastly popular Zee Khana Khazana TV Channel. This new paradigm in TV Shows features Live Cooking for an Urban Audience that has largely forgotten how to cook, rest assured that Chef Saby will change that!
