Healthy soup this monsoon Green apple and peas soup by Chef Kapoor

The beautiful weather during monsoons demands a piping bowl of soup for comfort. Soups are obviously very healthy and make for a great 7pm snack or a light dinner. Apples are known to keep obesity away and green apples contain more fibre and less sugar. Hence,green apples are better than red ones for diabeticsGreen peas are equally nutritious and promote bone health and help you lose weighttoo. These ingredients when combined result in a delicious recipe. Here is a green apple and peas soup recipe by Chef Sanjeev Kapoor:

Ingredients

  • 1 onion, finely chopped
  • 2-3 garlic cloves, crushed
  • 1 tbsp olive oil
  • 1 green apple, chopped
  • 1 potato roughly chopped
  • 2 cups vegetable stock
  • ¼ cup green peas
  • 2 tsp low-fat fresh cream
  • Salt and pepper to taste

Method

  1. In a deep pan, add the olive oil and allow it to heat.
  2. Add the crushed garlic and onions and saute it for 2 minutes.
  3. Add the green apple and potato pieces and give it a stir.
  4. Pour in the vegetable stock along with the green peas.
  5. Use salt and pepper as per taste.
  6. Cover and cook for 10-15 minutes.
  7. With a hand blender, make a smooth paste of the hot soup.
  8. Add the cream and cook for 1-2 minutes.
  9. Serve hot.

You can serve the soup with multigrain crackers or flaxseed crackers.

The soup if served along with crackers and dip or a salad can form a wholesome light dinner too. The beauty of the dish is, you can keep adding the ingredients as you chop. So preparation time is close to zero.
