Ingredients list for Apple Pulao

  • 2 medium Green apples Washington
  • 1 1/2 cups Rice soaked
  • 2 tablespoons Ghee
  • 2-3 Bay leaves
  • 12 - 15 Black peppercorns
  • 1 inch Cinnamon
  • 6-8 Green cardamoms
  • 5-7 Cloves
  • 1/2 cup Almonds chopped
  • 1/2 cup Cashewnuts chopped
  • 1 inch Ginger finely chopped
  • 1 teaspoon Fennel seeds (saunf)
  • 3-4 Green chillies slit
  • 1 medium Onion sliced
  • 1 tablespoon Dried pomegranate seeds (anardana)
  • 1 teaspoon Red chilli powder
  • to taste Salt
  • ¼ cup + for sprinkling Browned Onions
  • 2-3 + for garnish Fresh mint sprigs

Method

  1. Heat ghee in a deep non-stick pan. Add bay leaves, black peppercorns, cinnamon, broken green cardamoms, cloves, 1.almonds, cashewnuts, ginger, fennel seeds and green chillies and sauté for till fragrant.
  2. Add onion and sauté till golden.
  3. Deseed and cut Washington Apples into small pieces, add to pan and mix. Add dried pomegranate seeds, chilli powder and salt, mix and cook for a minute.
  4. Add drained rice and mix. Increase heat, add 3 cups water, mix, cover and cook till rice is done.
  5. Add browned onion and mix well.
  6. Place 2-3 mint sprigs in a bowl and put some apple pulao.
  7. Serve hot garnished with a mint sprig and some browned onions.
