Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Baked Prawn Appetizer-Cook Smart Recipe

  • Medium prawns peeled with tail intact and deveined 10-12

  • Stuffed green olives 10-12

  • Salt to taste

  • Lemon juice 1/2 tablespoon

  • Olive oil 4 teaspoons

  • Red chilli powder 1 teaspoon

  • Honey 4-6 teaspoons

  • Micro green shoots a few

Method

Step 1

Leaving the tails, slit prawns without cutting through and transfer into a bowl. Add salt and lemon juice and mix well. Keep aside to marinate for 10-15 minutes.

Step 2

Preheat oven to 200º C.

Step 3

Place an olive in the centre of each prawn on the uncut side, bring the two flaps of prawns together and pass a toothpick through all of them so that the olive is secured in the centre.

Step 4

Drizzle 2 teaspoons olive oil in a baking dish, place the prepared prawns in it and drizzle remaining marinade over them. Drizzle the remaining olive oil on top of them. Keep the dish in the preheated oven and bake for 3 minutes.

Step 5

Take the baking dish out, sprinkle red chilli powder and drizzle honey over the prawns bake again for 5 minutes. Take care not to overcook the prawns.

Step 6

Make a bed of micro bean shoots on a serving platter, place baked prawns on them and serve immediately.
