Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Broken Wheat Bean Sprouts Pulao Recipe

  • Broken wheat (dalia/lapsi) soaked 1 1/2 cup

  • Bean sprouts 1 cup

  • Oil 2 tablespoons

  • Bay leaves 2

  • Cinnamon 2 inch sticks

  • Cloves 4

  • Black peppercorns 10-12

  • Cumin seeds 1 teaspoon

  • Onions thinly sliced 2 medium

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Shelled green peas 1/2 cup

  • Fresh mint leaves 8-10

  • Ghee 2 tablespoons

  • Fresh coriander leaves chopped 1 tablespoon

Method

Step 1

Heat oil in a non stick kadai, add bay leaves, cinnamon, cloves, black peppercorns and cumin seeds and sauté till fragrant. Add onions and sauté till translucent.

Step 2

Drain and add dalia, with red chilli powder, turmeric powder and salt and mix well. Add green peas, mint leaves and mix well.

Step 3

Add 3 cups boiling water, cover and cook till dalia is cooked well.

Step 4

Add bean sprouts and ghee and mix well. Transfer into a serving bowl, garnish with coriander leaves and serve hot.
