Ingredients list for Caramalized Vegetable Sandwich in Footlong

  • ¼ cup Footlong bread
  • 1 medium Caramelized onion roasted and deseeded
  • 1 medium yellow bell pepper roasted and deseeded
  • 1 medium green capsicum roasted and deseeded
  • 1 footlong bread
  • 3 tablespoons butter
  • 1½ tablespoons garlic finely chopped
  • 4 garlic cloves
  • 1 fresh rosemary sprig
  • 1 fresh oregano sprig
  • 1 fresh thyme sprig
  • 2 teaspoons Balsamic vinegar
  • to taste Salt
  • a pinch crushed peppercorns
  • 4 tablespoons mayonnaise
  • 5-6 lettuce leaves

Method

  1. Horizontally slice footlong bread without cutting through. Press the base a little with fingers. Spread 2 tbsps butter on the base.
  2. Spread garlic on base, cover and roast in oven for 2-3 minutes.
  3. Cut red and yellow bell peppers and capsicum into thick juliennes.
  4. Heat remaining butter in a non-stick pan. Slice garlic cloves, add to the pan and sauté.
  5. Add pepper and capsicum juliennes, rosemary, oregano and thyme and toss.
  6. Add Balsamic vinegar and toss well. Add caramelized onions, toss and sauté well.
  7. Add salt, crushed peppercorns and mix well.
  8. Remove bread from oven. Open cover and spread 2 tbsps mayonnaise each on base as well as inside of upper cover. Place torn lettuce leaves on base and top with cooked vegetables.
  9. Cover, cut into 4 parts and serve immediately.
