Ingredients for Caramalized Vegetable Sandwich in Footlong Recipe

  • Footlong bread ¼ cup

  • Caramelized onion roasted and deseeded 1 medium

  • yellow bell pepper roasted and deseeded 1 medium

  • green capsicum roasted and deseeded 1 medium

  • footlong bread 1

  • butter 3 tablespoons

  • garlic finely chopped 1½ tablespoons

  • garlic cloves 4

  • fresh rosemary sprig 1

  • fresh oregano sprig 1

  • fresh thyme sprig 1

  • Balsamic vinegar 2 teaspoons

  • Salt to taste

  • crushed peppercorns a pinch

  • mayonnaise 4 tablespoons

  • lettuce leaves 5-6

Method

Step 1

Horizontally slice footlong bread without cutting through. Press the base a little with fingers. Spread 2 tbsps butter on the base.

Step 2

Spread garlic on base, cover and roast in oven for 2-3 minutes.

Step 3

Cut red and yellow bell peppers and capsicum into thick juliennes.

Step 4

Heat remaining butter in a non-stick pan. Slice garlic cloves, add to the pan and sauté.

Step 5

Add pepper and capsicum juliennes, rosemary, oregano and thyme and toss.

Step 6

Add Balsamic vinegar and toss well. Add caramelized onions, toss and sauté well.

Step 7

Add salt, crushed peppercorns and mix well.

Step 8

Remove bread from oven. Open cover and spread 2 tbsps mayonnaise each on base as well as inside of upper cover. Place torn lettuce leaves on base and top with cooked vegetables.

Step 9

Cover, cut into 4 parts and serve immediately.
