Ingredients list for Carrot and Beetroot ki Sabzi

  • 4 Carrot peeled and cut into diamonds
  • 4 Beetroot peeled and cut into diamonds
  • 1 teaspoon Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Split skinless black gram (dhuli urad dal)
  • 1/2 teaspoon Fenugreek seeds (methi dana)
  • 7-8 Curry leaves
  • 2 Green chillies slit
  • 1/2 teaspoon Sugar
  • to taste Salt
  • for garnishing scraped fresh coconut 2 tablespoons +

Method

  1. Heat oil in a non-stick pan, add mustard seeds and let them splutter.
  2. Add black gram, fenugreek seeds and curry leaves and sauté well.
  3. Add green chillies and sauté. Add beetroots and carrots, mix well and sauté for six to eight minutes.
  4. Add sugar and salt, mix well and sauté on high heat for two minutes.
  5. Add coconut and mix well. Switch off heat.
  6. Garnish with the coconut and serve hot.
