Ingredients list for Carrot and Oatmeal Cookies

  • 1 cup Carrots grated
  • 1 cup Oats
  • ¾ cup Butter
  • ½ cup Castor sugar (caster sugar)
  • ½ cup brown sugar/jaggery
  • 1 Egg
  • 1 cup Refined flour (maida)
  • ½ teaspoon Baking powder
  • ½ teaspoon Cinnamon powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • ¼ cup Raisins
  • 1 teaspoon Vanilla essence

Method

  1. Preheat oven to 180° C. Line a baking tray with a silicon mat.
  2. Cream together butter, castor sugar and brown sugar in a bowl with an electric beater. Break in the egg and whisk.
  3. Sieve flour, baking powder, cinnamon powder, baking soda and salt into another bowl. Add oats, raisins and carrot and mix. Add vanilla essence and whisk well.
  4. Add this mixture to the egg mixture and whisk well.
  5. Divide the mixture into equal portions, shape them into balls, lightly flatten and place on the lined baking tray.
  6. Place the baking tray in preheated oven and bake for 15 minutes. Remove from oven and cool.
  7. Serve.
