Cheesy Ragda Pattice

Ideal snack for a high tea party – simple to assemble and very delicious.Ragda is the white peas curry and pattice are the potato based cutlets. So the pattice combined along with the ragda and cheese, spiced up a little more with chaat masala powder and sev together makes it 'ragda pattice'. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Cheesy Ragda Pattice

  • 50 grams Mozzarella cheese cut, small cubes
  • 4 medium Potatoes boiled, peeled, mashed
  • as required Ragda readymade
  • ¼ teaspoon Turmeric powder
  • to taste Salt
  • ¼ cup Bread crumbs
  • for shallow frying Oil
  • as required Green chutney
  • as required Tamarind chutney
  • as required Sev
  • 1 medium Onion finely chopped
  • to sprinkle Chaat masala
  • as required Processed cheese
  • as required coriander leaves
  • as required Pomegranate pearls

Method

  1. Put potatoes, turmeric powder, salt and breadcrumbs in a bowl and mix.
  2. Divide the mixture into equal portions and shape them into balls. Make cavity in center and place 2 mozzarella cubes, seal and shape into tikkis.
  3. Heat some oil in a non-stick pan. Shallow-fry the tikkis, turning sides, till golden on both sides. Drain on absorbent paper.
  4. Take ragda in a microwave safe bowl and heat in the microwave for 1 minute.
  5. Place tikkis in individual bowls and mash lightly with a fork. Put some hot ragda on top. Put some green chutney, date-tamarind chutney, sev and onion on top of the ragda.
  6. Sprinkle some chaat masala and grate some processed cheese on top. Garnish with some coriander leaves and pomegranate pearls and serve immediately.
