The cuisine of Andhra Pradesh is reputedly the spiciest of all Indian cuisine. Foods include both the original spicy Andhra cooking and Muslim-influenced Hyderabadi cuisine. Rice is the staple diet and is used in a wide variety of ways.
Hyderabadi cuisine is influenced by the Muslim population, which arrived in Andhra centuries ago. Much of the cuisine revolves around meat. It is rich and aromatic, with a liberal use of exotic spices, ghee, nuts and dry fruits.

Ingredients for Chenai Podutuval Recipe

  • yam 6-8

  • Coconut to taste

  • Turmeric powder 1/2 teaspoon

  • Green chillies 4-5

  • Coconut,scraped 1/2

  • Oil 2 tablespoons

  • Mustard seeds 1 teaspoon

  • Split black gram skinless (dhuli urad dal) 1 1/2 teaspoons

  • Curry leaves 8-10

  • Whole dry red chillies 2-3

  • Tamarind pulp 1 teaspoon


Step 1

Wash, clean and cut the yam into medium sized pieces. Pressure-cook the yam with salt and turmeric. Keep aside.

Step 2

Grind the coconut and green chillies to a coarse paste. Keep aside.Heat the oil and season it with curry leaves, dry red chillies, mustard seeds and split black gram.

Step 3

When the mustard seeds start to splutter add the cooked yam pieces, the coconut paste and ½ a cup of water. Cover and simmer on slow heat. Lastly add the tamarind pulp and cook till the vegetables till dry.

Step 4

Serve hot.
