Ingredients list for Corn Tomato Bharta on Toast

  • 1 cups Frozen Corn Kernels
  • 2 medium Tomatoes
  • 1 large Brinjal roasted and peeled
  • 2 tablespoons Ghee
  • 1 teaspoon Cumin seeds
  • 5-6 cloves Garlic
  • 1 inch piece Ginger
  • 1 medium Onion
  • 1-2 Green chillies finely chopped
  • 1/2 teaspoon Red chilli powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • a pinch Turmeric powder
  • 1/2 teaspoon Dried mango powder
  • 1/2 teaspoon Chaat masala
  • Juice of 1 lemon wedge
  • 15-20 Fresh mint leaves
  • to taste Salt
  • 1 French loaf (baguette)
  • to sprinkle Onion seeds (kalonji)
  • to garnish Breadcrumbs

Method

  1. Heat ghee in a non-stick kadai, add cumin seeds and sauté till fragrant. Finely chop garlic and ginger and add to the kadai and sauté for a minute.
  2. Finely chop onion, add to the kadai and sauté for 2-3 minutes. Finely chop tomatoes and add to the kadai, mix well and sauté for 3-4 minutes.
  3. Coarsely grind corn and add to the kadai. Add green chillies, red chilli powder, coriander powder, cumin powder, turmeric powder, dried mango powder, chaat masala and mix well.
  4. Chop brinjal finely and add to the kadai. Add lemon juice and mix.
  5. Finely chop mint leaves, add to the kadai and mix well. Add salt and mix and cook for 2-3 minutes.
  6. Cut the French loaf diagonally into 8 slices. Arrange the slices on a serving plate. Spread the bharta over them.
  7. Sprinkle onion seeds and garnish with bread crumbs. Serve immediately.
