Cream of Lauki Soup A simple but simply delicious soup of bottle gourd. By Sanjeev Kapoor 10 Nov 2014 in Recipes Course New Update Main Ingredients Bottle gourd (lauki/doodhi, Onion Cuisine Fusion Course Soups Prep Time 6-10 minutes Cook time 11-15 minutes Serve 8 Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for Cream of Lauki Soup 1 medium Bottle gourd (lauki/doodhi cut into cubes 2 medium Onion cut into small cubes 10 cloves Garlic crushed to taste Salt to taste Black pepper powder A dash Vinegar Method Pressure cook bottle gourd, onions and garlic with four cups of water till three whistles or till soft. Strain the vegetables. Grind the vegetables to a smooth paste and strain the pulp. Heat a non stick pan. Boil the strained water and vegetable pulp. If the soup thickens, add a little water to get a soup consistency. Add salt and pepper powder to taste. Mix well.
