Ingredients list for Cream of Lauki Soup

  • 1 medium Bottle gourd (lauki/doodhi cut into cubes
  • 2 medium Onion cut into small cubes
  • 10 cloves Garlic crushed
  • to taste Salt
  • to taste Black pepper powder
  • A dash Vinegar

Method

  1. Pressure cook bottle gourd, onions and garlic with four cups of water till three whistles or till soft. Strain the vegetables.
  2. Grind the vegetables to a smooth paste and strain the pulp.
  3. Heat a non stick pan. Boil the strained water and vegetable pulp.
  4. If the soup thickens, add a little water to get a soup consistency.
  5. Add salt and pepper powder to taste. Mix well.
  6. Serve hot with a dash of vinegar.
