Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Crispy Chicken With Lemon And Olives Recipe

  • Chicken with bone 4

  • Lemons grated 1 teaspoon

  • Lemon juice 4 tablespoons

  • Garlic crushed 2 cloves

  • Refined flour (maida) 3 tablespoons

  • Cornflour/ corn starch 1/4 cup

  • Eggs 2

  • Salt to taste

  • Bread crumbs as required

  • Dry thyme 2 teaspoons

  • Olive oil 5 tablespoons

  • Black olives seeded 3/4 cup

  • Tomatoes sliced 6 medium

  • White vinegar 1 tablespoon

Method

Step 1

Combine chicken breasts with lemon rind, two tablespoon lemon juice and garlic in a medium sized bowl. Cover and let it marinate in the refrigerator for three to four hours.

Step 2

Drain chicken and pat dry with absorbent paper. Combine refined flour with corn flour and beat in eggs to make a batter. Add salt to taste, white pepper powder and thyme. Dip each chicken breast in this batter and the roll in breadcrumbs so that each breast is coated lavishly.

Step 3

Heat olive oil in a nonstick pan and sear chicken breasts on both sides. Place on baking tray and bake at 180 ºC for fifteen minutes or until just tender. To make lemon olive mixture, heat oil and sauté garlic. Add olives, tomatoes and stir gently until just warmed through. Add vinegar and two tablespoon lemon juice and remove from heat.

Step 4

Serve chicken with warm lemon olive mixture.
