Ingredients list for Drunken Chicken With Vegetables

  • 250 grams Chicken minced
  • 1 medium Carrot peeled
  • 1 medium Onion
  • 1 tablespoons Oil
  • 7-8 Button mushrooms
  • 1-2 cups White wine
  • 3 Red bird’s-eye chillies
  • to taste Salt
  • 1/2 cup Rice,soaked
  • a pinch Black pepper powder
  • 3-4 Asparagus
  • 5-6 florets Broccoli
  • 1/2 Red capsicum
  • 1/2 Green capsicum

Method

  1. Halve carrot and cut into cubes. Chop onion. Quarter mushrooms.
  2. Heat oil in a non stick pan, add onion and sauté. When onions are lightly sautéed, add white wine.
  3. Shape chicken mince into small balls and add to the pan. Add mushrooms and carrot.
  4. Diagonally halve bird’s eye chillies and add. Add salt and stir.
  5. Add rice and a pinch of black pepper powder.
  6. Trim the tips of asparagus and set aside. Cut the remaining asparagus into big pieces and add.
  7. Cover and cook for 3-4 minutes. Cut red and green capsicum into small pieces and add.
  8. Add a little water, mix, cover and cook.
  9. When rice is almost done, add broccoli and asparagus tips and mix.
  10. Transfer into a serving bowl and serve hot.
