Once the seeds begin to change color, add green chillies and sauté for half a minute. Add potatoes and continue to sauté till crisp. Add peanuts, salt, sugar and coconut and mix well. Cover and cook on low heat for four to five minutes. Transfer into a serving plate, garnish with coriander leaves and serve hot.
