Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Fish Fry in Banana Leaf Recipe

  • Medium pomfrets cut into thick darnes 2

  • Banana leaves slightly toasted a few

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Lemon 1/2

  • Oil 3 tablespo to shallow fry

  • Mustard seeds 1 teaspoon

  • Curry leaves 12-15

  • Garlic chopped 10-12 cloves

  • Medium onion chopped 1

  • Tata Sampann Tomato Chutney 200 grams

  • Charcoal burning 1-2 pieces

  • Lemon slices to garnish

  • Micro greens to garnish

Method

Step 1

Place fish darnes on a plate, add turmeric powder, salt, and squeeze the juice of ½ lemon and rub them in well. Set aside to marinate for 10 minutes.

Step 2

Heat 1½ tbsps oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, mix and sauté for a few seconds.

Step 3

Add garlic, mix and sauté for 30 seconds. Add onion, mix well and sauté till translucent.

Step 4

Add Tata Sampann Tomato Chutney, mix well, cook for 1-2 minutes and take the pan off the heat.

Step 5

Spread some this mixture on each piece of banana leaf, place one darn of fish and spread a little more of the mixture on top. Bring the sides of the banana leaf to the centre and wrap it like a parcel. Secure them with toothpicks.

Step 6

Heat sufficient oil in another non-stick pan, place a few parcels at a time, on it and shallow-fry for 2-3 minutes, flip and place a piece of hot charcoal, cover and cook for 2 minutes.

Step 7

Discard the charcoal and cook for 2-3 minutes. Take the pan off the heat.

Step 8

Unwrap the parcels on the serving plate, garnish with lemon slices and micro greens and serve hot.
