By Sanjeev Kapoor 09 Dec 2014 in Recipes Course New Update Main Ingredients Carrots, Tomatoes Cuisine Fusion Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for Gajar Tamatar Ki Subzi 3 large Carrots 1/2 inch cubes 2 medium Tomatoes quartered 1 cup Green peas shelled 1/2 teaspoon Fenugreek seeds (methi dana) 1 teaspoon Fennel seeds (saunf) 1 tablespoon Coriander seeds 2 tablespoons Ghee 5-6 Curry leaves 1/2 teaspoon Cumin seeds 1/4 teaspoon Asafoetida to taste Salt 1 teaspoon Red chilli powder 1/4 teaspoon Garam masala powder 1 tablespoon Lemon juice 1 tablespoon Fresh coriander leaves chopped Method Advertisment Dry roast and grind fenugreek seeds, fennel seeds and coriander seeds to a coarse powder. Heat ghee in a kadai. Add curry leaves and cumin seeds. When the seeds change colour add asafoetida and tomatoes and sauté on medium heat for half a minute. Add ground masala powder and continue to sauté for a minute. Add green peas, carrots and salt along with half a cup of water. Cover and cook till vegetables are almost done. Add red chilli powder and garam masala powder and cook for another four to five minutes or till vegetables are done. Add lemon juice, stir and serve hot garnished with coriander leaves.
