Ingredients list for Gode Mutton

  • 1 kilogram Mutton 1 1/2 inch pieces on the bone
  • 1 1/2 tablespoons Garlic Paste
  • 1 1/2 tablespoons Ginger paste
  • to taste Salt
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Caraway seeds (shahi jeera)
  • 2 Green cardamoms
  • 1 inch stick Cinnamon
  • 4 Cloves
  • 4 tablespoons Ghee
  • 2 tablespoons Fresh coriander leaves,chopped

Method

  1. Apply ginger paste, garlic paste, salt and turmeric powder to the mutton pieces and set aside for two hours preferably in a refrigerator.
  2. Roast caraway seeds, green cardamoms, cinnamon and cloves, lightly on a thick tawa, separately. Mix, cool and grind to a fine power in a mortar with a pestle. Heat ghee in a pan, add the marinated mutton and sauté for four to five minutes.
  3. Add two cups of water and bring it to a boil. Simmer on low heat till mutton is almost done. Add the prepared masala powder and adjust salt if necessary.
  4. Serve hot garnished with coriander leaves.
