Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Grape Leaf Dolmas Recipe

  • Grape Leaves 20

  • Spinach 1/2 cup

  • Lemon juice 2 1/2 tablespoon

  • Lemon wedges to serve

  • FILLING Spinach blanched and chopped 1/4 cup

  • Rice 1/4 cup

  • Salt

  • Currants 1/4 cup

  • Scallions finely chopped 1

  • Parsley chopped 2 1/2 tablespoons

  • Fresh coriander leaves, chopped 2 teaspoon

  • Dill finely chopped 2 teaspoon

  • Lemon rind grated 1 teaspoon

  • Salt to taste

  • White pepper powder to taste

Method

Step 1

Rinse the grape leaves and place them in a heat proof bowl.

Step 2

Pour enough boiling water to cover and soak for one hour. Drain well.

Step 3

Coat the leaves with olive oil and lemon juice evenly.

Step 4

Place rice and two cup of water in a pan and add a pinch of salt and bring it to boil Lower the heat and cook until all the liquid is absorbed.

Step 5

Set aside to cool. Add currants, spinach, scallions, parsley, coriander leaves, dill, lemon rind and white pepper powder to the cooled rice and mix well.

Step 6

Place a grape leaf on clean board.

Step 7

Place a tablespoon of the rice mixture and roll into cylinder shape. Serve cold with lemon wedges.
