By Sanjeev Kapoor 05 May 2016 in Recipes Course New Update Main Ingredients Grape Leaves, Spinach Cuisine Middle Eastern Course Snacks and Starters Prep Time 1.30-2 hour Cook time 16-20 minutes Serve 4 Taste Tangy Level of Cooking Moderate Others Veg Ingredients list for Grape Leaf Dolmas 20 Grape Leaves 1/2 cup Spinach 2 1/2 tablespoon Lemon juice to serve Lemon wedges 1/4 cup FILLING Spinach blanched and chopped 1/4 cup Rice Salt 1/4 cup Currants 1 Scallions finely chopped 2 1/2 tablespoons Parsley chopped 2 teaspoon Fresh coriander leaves, chopped 2 teaspoon Dill finely chopped 1 teaspoon Lemon rind grated to taste Salt to taste White pepper powder Method Rinse the grape leaves and place them in a heat proof bowl. Pour enough boiling water to cover and soak for one hour. Drain well. Coat the leaves with olive oil and lemon juice evenly. Place rice and two cup of water in a pan and add a pinch of salt and bring it to boil Lower the heat and cook until all the liquid is absorbed. Set aside to cool. Add currants, spinach, scallions, parsley, coriander leaves, dill, lemon rind and white pepper powder to the cooled rice and mix well. Place a grape leaf on clean board. Place a tablespoon of the rice mixture and roll into cylinder shape. Serve cold with lemon wedges.
