History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.

Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Hare Lehsun Ki Machchli Recipe

  • Fresh green garlic 100 grams

  • Fish fillet 500 grams

  • Green chillies , broken 2

  • Juice of 1 lemon

  • Crushed black peppercorns 1 teaspoon

  • Salt to taste

  • Oil 3 tablespoons

  • Garlic 25-30 cloves

Method

Step 1

Roughly chop green garlic and put into a mixer jar. Add green chillies, lemon juice and sufficient water and grind into a chutney.

Step 2

Cut fish into small cubes and place in a bowl. Add chutney, crushed black peppercorns, salt and mix well. Set aside to marinate for ½ hour.

Step 3

Heat oil in a non stick pan. Mash the garlic cloves and add to the pan and saute, stirring, till golden.

Step 4

Add fish cubes, cover and cook for 2 minutes. Flip and cook from the other side for 2 minutes.

Step 5

Transfer onto a serving plate and serve hot.
