How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Hari Bhari Khichdi Recipe

  • Rice soaked 1/2 cup

  • Split Green gram skinless 1/4 cup

  • Ghee 2 tablespoons

  • Cumin seeds 1/2 teaspoons

  • Garlic chopped 4 cloves

  • Spring onions chopped 5

  • Green peas 1/4 cup

  • Spring onion greens chopped 2 stalks

  • Spinach blanched and pureed 25 leaves

  • Salt to taste

Method

Step 1

Pressure-cook the rice and split green gram with two cups of water till pressure is released four times (four whistles). Heat the ghee in a non-stick deep pan. Add the cumin seeds, garlic and spring onions and sauté for two minutes.

Step 2

Add the green peas, spring onion greens and spinach puree and sauté for a minute. Add the cooked rice mixture and salt and mix well. Serve hot.
