Ingredients list for Hot Garlic Sauce

  • 10-12 Dried red chillies , seeded and soaked for 15 minutes
  • 1 tablespoon Garlic chopped
  • 1 tablespoon Oil
  • 1 teaspoon Soy sauce
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2 tablespoons Tomato ketchup
  • 1/2 teaspoon Sugar
  • 1 teaspoon Vinegar
  • 250 grams Boneless chicken , cut into 1 inch pieces
  • 1 medium Onion , cubed and layers separated
  • 1 medium Tomato , cubed
  • 1 medium Yellow capsicum , cubed
  • for garnish Spring onion greens , diagonally sliced

Method

  1. Drain red chillies and put into a blender jar, add a little of the water in which the chillies were soaked and blend to a fine paste.
  2. Heat oil in a non-stick pan, add garlic and sauté for ½ minute. Add red chilli paste, mix and saute till the oil separates.
  3. Add ½ cup water and mix well. Add soy sauce, salt, crushed peppercorns, tomato ketchup and sugar, mix and cook for a minute. Add vinegar and mix.
  4. Transfer some of the sauce into a serving bowl and set aside.
  5. Add chicken pieces to the sauce remaining in the pan, mix well and cook for 4-5 minutes. Add salt and toss. Add onion, tomato and yellow capsicum, mix well and cook till chicken is done.
  6. Remove the pan from heat, transfer into a serving bowl, garnish with spring onion springs and serve with the hot garlic sauce in the bowl.
