Ingredients list for Jhuri Aloo Bhaja

  • 8 Medium potatoes peeled
  • to deep fry Oil
  • 1/2 cup Raw peanuts
  • 2-3 sprigs Curry leaves
  • to taste Salt
  • to taste Black peppercorns crushed
  • 1/2 teaspoon Chaat masala

Method

  1. Take a bowl of water, grate potatoes into the bowl and wash them well. Squeeze the grated potatoes and spread on a kitchen towel to dry.
  2. Heat sufficient oil in a kadai, add the grated potatoes and deep- fry on low heat till golden and crisp. Drain on absorbent paper.
  3. Add peanuts to the same hot oil and deep-fry till crisp. Drain on absorbent paper. Deep fry the curry leaves in the same oil and drain on absorbent paper.
  4. Put the fried potatoes, peanuts and curry leaves in a bowl, add salt, crushed black peppercorns and chaat masala and mix well.
  5. Transfer into a serving bowl and serve immediately.
