Ingredients list for Konkani Chicken and Raw Mango Curry

  • 750 grams Chicken cut into 2 inch pieces on the bone
  • 1 Medium raw mango
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 2 tablespoons Coconut oil
  • 1/2 Fresh coconut scraped
  • 4 Dried red chillies
  • 1 teaspoon Rice
  • 1 Medium onion chopped
  • 1 (20 gram Tata Sampann Chicken Masala sachet
  • 2 teaspoons Tamarind pulp
  • 5-6 Dried kokum petals
  • for garnish Fresh coriander sprig
  • to serve Cooked red rice

Method

  1. Marinate chicken with salt and turmeric powder.
  2. Heat coconut oil in a deep non-stick pan. Add coconut, red chillies, rice, half the chopped onion and half Tata Sampann Chicken Masala and sauté for a few seconds.
  3. Drain and transfer the mixture into a blender jar, add sufficient water and blend to a fine paste.
  4. Add remaining onion to the same pan and sauté for 3-4 minutes.
  5. Peel, remove seed and cut half the raw mango into ½ inch pieces. Cut the unpeeled mango into ½ inch pieces.
  6. Add chicken to the pan, mix and sauté for 2-3 minutes. Add remaining Tata Sampann Chicken Masala and mix well. Add salt, mix and sauté for 3-4 minutes.
  7. Add the ground paste and mix well. Add 1 cup water and stir to mix. Add raw mango pieces and mix well.
  8. Add tamarind pulp, mix, cover and cook on medium heat for 15-20 minutes. Add kokum petals and mix well.
  9. Garnish with coriander sprig and serve hot with red rice.
