Add powdered sugar and mix. Add eggs and mix. Add buttermilk and mix well to make a smooth batter. Add oatmeal and milk and mix. Add a little oil and vanilla essence and mix well. To make the filling, melt butter in a pan and toss all the dry fruits in it for two to three minutes. Transfer into a bowl and let it cool a bit. Add maple syrup and mix. Heat a pan, grease it with a little oil. Pour a ladleful of batter and spread around the pan. Drizzle a little oil all round and let it cook on medium heat for two minutes. Flip and cook on the other side. Place a little of the filling on one side of the pancake and roll it up. Serve hot immediately. Make other pancakes with the remaining batter in the same way.
