Ingredients list for Olive Upma

  • 10-12 Black olives sliced
  • 1 cup Semolina
  • 3 tablespoons Extra virgin olive oil
  • 1/4 teaspoon Mustard seeds
  • 5-6 Curry leaves
  • 1 large Onion chopped
  • 3-4 Green chillies chopped
  • to taste Salt

Method

  1. Heat extra virgin olive oil in a non-stick pan.
  2. Add mustard seeds and curry leaves.
  3. When the seeds splutter, add onion and sauté till lightly coloured.
  4. Add semolina and stir.
  5. Add green chillies and stir.
  6. Add two and a half cups of water, salt to taste and mix.
  7. Add the olives and mix. Reduce heat, cover and cook till all the water is absorbed.
  8. While serving you can pack the upma in small moulds and unmould them in serving plates.
  9. Serve hot.
