Ingredients list for Paneer Stuffed Potato Sandwich

  • 1/2 cup Cottage cheese (paneer) cubes
  • 3 Medium potatoes boiled, peeled and mashed
  • 4 White bread slices
  • 1 teaspoon Red chilli flakes
  • 2 tablespoons Fresh coriander leaves chopped
  • 3/4 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • to taste Salt
  • 2 teaspoon to shallow fry Oil
  • 1-2 Green chillies chopped
  • 1 Small onion chopped
  • 1 Small tomato chopped
  • 1 teaspoon Coriander powder
  • 3/4 teaspoon Red chilli powder
  • 1 teaspoon Chaat masala
  • as required Refined flour slurry
  • for coating Breadcrumbs
  • to serve Tomato ketchup

Method

  1. Take the potatoes in a bowl, add red chilli flakes, 1 tbsp coriander leaves, garlic powder, onion powder and salt and mix well.
  2. Heat oil in a non-stick pan, add green chillies and saute for 30 seconds. Add onion, tomato and salt, mix well and sauté till the tomatoes are pulpy.
  3. Add coriander powder, red chilli powder and chaat masala, mix well and saute for a minute.
  4. Add ¼ cup water, mix and cook for 1 minute. Add cottage cheese cubes, a little salt and remaining coriander leaves, mix well and take the pan off the heat.
  5. Place some cottage cheese stuffing on one slice of bread and cover it with another slice. Make more sandwiches similarly. Halve each sandwich.
  6. Take cornflour slurry in a bowl and breadcrumbs in another bowl. Dip each sandwich half in the slurry and press gently to remove excess slurry. Coat each sandwich with the potato mixture till they are fully covered. Roll the sandwiches in breadcrumbs and set aside on a plate.
  7. Heat sufficient oil in a non-stick pan, place the prepared sandwich in it and shallow-fry, turning sides till evenly golden and crisp on both sides. Drain on absorbent paper.
  8. Halve each sandwich diagonally, arrange them on a serving platter and serve hot with ketchup.
