Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paunk Ka Salad Recipe

  • Fresh green jowar (paunk) 1 1/2 cup

  • Green garlic 12-15 stalks

  • Fresh coriander leaves chopped 1/4 bunch

  • Green chilli 2

  • Raw mango chopped 1 tablespoon

  • Salt to taste

  • Lemon juice 1 teaspoon

  • Onion chopped 1 large

  • Tomato seeded and chopped 1 large

  • Pepper sev 1/2 cup

Method

Step 1

Heat a non stick pan on low heat, add the paunk and let it heat for three to four minutes. Meanwhile grind together green garlic, coriander leaves, green chillies, half the raw mango to a coarse chutney.

Step 2

Transfer the chutney into a bowl. Add salt and lemon juice and mix. Transfer the paunk into a mixing bowl. Add onion, tomato and salt and mix. Add one tablespoon of green garlic chutney and mix well.

Step 3

Grate the remaining raw mango and sprinkle on top. Sprinkle lemon and pepper sev and serve immediately with the green chutney in a separate bowl.
