Ingredients list for Samose ki Subzi

  • 4 Punjabi Samosa
  • 1 tablespoon Red Tomatoes
  • a pinch Asafoetida
  • 3 Dried red chillies broken
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Ginger finely chopped
  • 1 tablespoon Garlic finely chopped
  • 6-8 medium Red tomatoes finely chopped
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Kashmiri red chilli powder
  • to taste Salt
  • 2 tablespoons Fresh coriander leaves finely chopped
  • for garnishing A fresh coriander sprig

Method

  1. Heat oil in a non-stick pan, add asafoetida, dried red chillies and cumin seeds and saute till fragrant.
  2. Add ginger and garlic and sauté for 1-2 minutes. Add tomatoes and cook for 6-8 minutes or till tomatoes become pulpy.
  3. Add turmeric powder, Kashmiri red chilli powder and salt and saute for 1-2 minutes. Add 3 cups of water and cook till the gravy comes to a boil.
  4. Break the samosas into big pieces, add to the gravy and mix lightly.
  5. Add coriander leaves, mix and simmer for 1-2 minutes.
  6. Transfer into a serving bowl, garnish with a coriander sprig and serve hot.
