  • 4 large Eggs
  • 3 large Mushrooms
  • 1/2 medium Red capsicum cubed
  • 1/4 cup Cream
  • to taste Salt
  • 1 tablespoon Butter
  • 1 medium Onions chopped
  • 3 large Green Californian chillies sliced
  • 1/4 cup Cheddar cheese grated
  • 1/4 cup Monterey Jack cheese grated

  1. Break eggs in a large bowl and beat lightly. Stir in fresh cream and salt to taste.
  2. Melt butter in a large frying pan. Cook onions, mushrooms and red capsicum until tender. Add chillies and egg mixture. Cook, stirring occasionally until eggs begin to set.
  3. Sprinkle both the cheeses over the eggs. Cover and cook until eggs are set and fully cooked.
