By Sanjeev Kapoor 24 Nov 2021 in Recipes Course New Update Advertisment Main Ingredients Yogurt, Walnuts Cuisine Indian Course Mithais Prep Time 4-5 hour Cook time 0-5 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Shrikhand with Caramelised Walnuts 3 cups Yogurt 2 tablespoons Walnuts , roughly chopped 2 tablespoons Sugar 3/4 cup Powdered sugar 1/4 teaspoon Green cardamom powder 1 tablespoon Milk a few Saffron strands Method Pour the yogurt into a large piece of muslin cloth, bring the edges together to form a potli. Keep the potli in a strainer kept over a large bowl and let the excess water drain off completely. Keep the bowl in the refrigerator so that the yogurt doesn’t turn sour. This may take 3-4 hours. Put the hung yogurt into a sieve kept over another bowl, add powdered sugar and mix till the sugar blends completely with the yogurt and the mixture passes through the sieve into the bowl. Heat a non-stick pan, add walnuts and 2 tablespoons sugar and cook stirring continuously till the sugar caramelizes. Transfer the mixture onto a plate lined with butter paper and spread evenly. Add green cardamom powder to the yogurt mixture. Take milk in a small bowl, add saffron and mix well. Add this to the yogurt mixture and mix everything well. Add half the caramelized walnuts and mix well.
