Ingredients list for Simple and Easy Egg Curry

  • 4 Eggs peeled
  • 4 tablespoons Coconut Milk
  • 4 medium Onions, sliced
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Kashmiri red chilli powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Garam masala powder
  • 1 cup Coconut milk
  • to taste Salt
  • 1 cup Thick coconut milk

Method

  1. Heat oil in a non stick pan. Add onions and saute till golden brown.
  2. Add turmeric powder, chilli powder, coriander powder, garam masala powder and sauté for a minute.
  3. Add eggs and sauté for a minute. Add salt, thin coconut milk and cook for four to five minutes.
  4. Add thick coconut milk, mix well. Once a boil comes, take the pan off the heat.
  5. Serve hot with appam, chapati or dosa.
