By Sanjeev Kapoor 03 Jun 2016 in Recipes Course New Update Main Ingredients Brinjals, Vinegar Cuisine Indian Course Pickles, Jams and Chutneys Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Sour Level of Cooking Easy Others Veg Ingredients list for Sour And Spicy Brinjal Pickle 500 grams Brinjals diced Vinegar 50 grams Whole dry red chilli 2 teaspoon Cumin seeds 1 teaspoon Mustard seeds 2 teaspoons Fenugreek seeds (methi dana) 10 cloves Garlic 2 inch piece Ginger 1 teaspoon Turmeric powder 1 cup Vinegar 4 tablespoons Salt 1 3/4 teaspoons Oil Method Heat a tablespoon of oil and sauté the red chillies. Drain, cool and powder. In the same oil saute cumin seeds, mustard seeds and fenugreek seeds. Cool and powder. Grind ginger and garlic to a paste. Heat some oil and saute ginger-garlic paste. Heat some more oil and saute the brinjal pieces till they shrink to half their size. Add the spice powder, red chilli powder, vinegar, salt and the sauteed ginger-garlic paste. Continue cooking until the mixture is well blended and the oil separates. Cool and store in airtight glass jar. This pickles lasts for 2 months.
