Ingredients list for Spinach & Corn Sandwich

  • 2 medium bunches Spinach leaves blanched, cooled, chopped
  • 1 cup American corn kernels boiled
  • 8 Multigrain bread slices
  • as required Butter
  • 8-10 cloves Garlic chopped
  • 1 tablespoon Refined flour
  • 1/2 cup Milk
  • to taste Salt
  • to taste Black peppercorns crushed
  • 1/2 cup Processed cheese grated
  • to serve Potato chips

Method

  1. Heat 1 tablespoon butter in a non-stick pan, add garlic and sauté till fragrant.
  2. Add corn kernels and refined flour, mix well and saute for 2 minutes. Add milk and cook till the mixture thickens slightly. Mash corns with a potato masher.
  3. Add spinach, salt and crushed black pepper And mix well.
  4. Add processed cheese and mix till it melts. Transfer the mixture into a bowl and set aside to cool down to room temperature.
  5. Heat a non-stick tawa.
  6. For each sandwich, apply butter on a bread slice and place it buttered side down on the tawa.
  7. Spread some spinach-corn mixture on it and cover with another bread slice. Spread some butter on the top side of the sandwich. When the underside turns golden, turn it over and cook till the other side is equally golden.
  8. Cut each sandwich into 2 triangles, place them on a serving plate and serve warm with potato chips.
