Ingredients list for Steamer Chicken

  • 700 grams Chicken cut into 12 pieces on the bone
  • 1 cup Yogurt
  • 1 1/2 teaspoons Fennel seeds (saunf)
  • 1 teaspoon Poppy seeds (khuskhus/posto)
  • 4 tablespoons Oil
  • to taste Salt
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 3/4 teaspoon Turmeric powder
  • 1 1/2 teaspoons Red chilli powder
  • 2 tablespoons Mustard oil
  • 2 teaspoons Vinegar
  • 2 large Potatoes quartered
  • 2 tablespoons Dried red chillies
  • 2 large Onions finely chopped
  • 1 1/2 teaspoons Cumin powder
  • 2 cup Coriander seeds
  • 2 tablespoons Fresh coriander leaves finely chopped
  • 1/2 teaspoon Garam masala powder
  • 1 teaspoon Ghee

Method

  1. Dry roast coriander seeds, fennel seeds and poppy seeds till fragrant. Cool and grind to a powder.
  2. Heat oil in a non stick pan. Marinate chicken with salt, 1 tsp ginger paste, 1 tsp paste garlic paste, turmeric powder, ½ tsp red chilli powder, mustard oil, vinegar for 15 minutes.
  3. Add potatoes to oil in the pan, cover and sauté till light golden. Drain and set aside.
  4. Cut red chillies into small pieces and remove seeds.
  5. Pour the oil remaining from sautéing potatoes into another non stick pan, add red chillies and onions and sauté till golden. Add remaining ginger paste, remaining garlic paste, cumin powder, remaining red chilli powder and sauté.
  6. Add chicken and sauté on high heat for 3-5 minutes.
  7. Mix yogurt and ground powder and add to the chicken and mix well. Add potatoes and mix. Add ½ cup water and mix. Cover and cook.
  8. Chop coriander leaves and add and cook for 10-12 minutes or till the chicken is done.
  9. Add garam masala powder and ghee and mix. Serve hot.
