Cover and cook till the pumpkin is half done. To make syrup, heat 3 tbsps water in another non-stick pan, add palm sugar and mix well. Add castor sugar to the 1st pan. Add coconut milk and vanilla essence and mix well. Add sago and mix well. Cover and cook till the pumpkin and sago are done and the mixture thickens. Pour the pumpkin sago into a serving bowl, top with palm sugar syrup and serve warm.
