By Sanjeev Kapoor 18 Aug 2015 in Recipes Course New Update Main Ingredients Eggs, Onions Cuisine Turkish Course Snacks and Starters Prep Time 6-10 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Turkish Pan Eggs 4 Eggs 2 medium Onions sliced 1 Red capsicum cut into thin strips 2 tablespoons Olive oil 2 Fresh red chillies chopped 1/2 cup Tomatoes chopped 1 teaspoon Castor sugar (caster sugar) to taste Salt to taste Black peppercorns crushed 1 tablespoon Fresh parsley chopped Method Heat olive oil in a non-stick pan, add onions, capsicum and green chillies, mix and sauté till the onions turn translucent. Add tomatoes, castor sugar, salt and crushed peppercorns, mix well and cook till all the moisture evaporates. Using a wooden spoon, create four pockets in the tomato mixture and break the eggs into them. Cover and cook on low heat until the eggs are just set. Sprinkle parsley on top and serve hot.
