Ingredients list for Veggie Burger

  • 4 tablespoons Green peas blanched
  • 4 tablespoons French beans blanched and chopped
  • 4 tablespoons Carrots blanched and chopped
  • 4 tablespoons Corn kernels blanched
  • 1 Small cauliflower florets separated and blanched
  • 3-4 Medium potatoes boiled and peeled
  • 4 Burger buns
  • 2 Green chillies
  • 6-7 cloves Garlic
  • 1 inch Ginger roughly chopped
  • to taste Salt
  • to taste Black peppercorns crushed
  • 5-6 slices White bread
  • for coating Breadcrumbs
  • to deep fry Oil
  • for applyi Butter
  • 7-8 tablespoons Mayonnaise
  • 3-4 tablespoons Green chutney
  • 4 slices Cheddar cheese
  • A few Iceberg lettuce leaves shredded
  • 1 Medium onion
  • 8 + to serve Tomato roundels

Method

  1. Finely chop together green peas, French beans, carrots, corn kernels and cauliflower in a chopper.
  2. Add green chillies, garlic cloves and ginger and chop finely.
  3. Transfer into a bowl. Grate in the potatoes, add salt and crushed black peppercorns and mix well.
  4. Heat sufficient oil in a kadai.
  5. Crumble bread slices, add to the bowl and mix well. Divide the mixture into equal portions and shape them into patties.
  6. Spread the breadcrumbs in a plate, roll the patties in breadcrumbs and slide them into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
  7. Heat a non-stick tawa, halve the burger buns horizontally, place them on the hot tawa and toast, turning sides, till crisp.
  8. Apply some butter on the buns and toast for a few more seconds. Remove from heat and set aside on the work top.
  9. To make chutney mayonnaise, take mayonnaise in a bowl, and green chutney and mix well.
  10. Place a cheese slice on the base half of each bun and top with some lettuce.
  11. Slice the onions into roundels and separate into rings. Sprinkle some salt over them and mix. Place a few of them over the lettuce, top with some chutney mayonnaise, a patty, 2 tomato slices, some more chutney mayonnaise and cover with the top half of the buns.
  12. Keep the burgers on separate serving plates and serve immediately with crisps, tomato slices and lettuce leaves.
