Method

  1. Clean, wash and par boil the mushrooms. Peel and cut onions into 1½ inch squares. De-seed and cut capsicums into 1½ inch squares. Halve the tomatoes, remove seeds and cut into 1½ inch squares.
  2. For marination, beat the yogurt till smooth, add lime juice, turmeric powder, fennel powder, yellow chilli powder, chopped green chillies and seasonings and mix well.
  3. Marinade the mushrooms and other vegetables in it for 1 hour. Skewer the vegetables onto barbeque sticks in this fashion : three mushroomsfollowed by a capsicum, tomato, onion and end with a mushroomCook them in the tandoor or barbeque for about 10 minutes.
    Serve hot with mint chutney and onion salad.
