Take chilled flour in a bowl, add cornflour, ΒΌ tsp lemon zest, salt, a little crushed black peppercorns and sufficient beer and whisk to make a smooth batter of thick consistency. Dip asparagus in the batter and slide into hot oil. Deep fry on medium heat. Add a little of remaining lemon zest, crushed peppercorns, salt and lemon juice to mayonnaise and mix well. Drain asparagus when lightly browned, place on tissue paper; dab to remove excess oil. Sprinkle remaining lemon zest and crushed peppercorns and serve hot with mayonnaise dip.
