By Sanjeev Kapoor 08 Nov 2016 in Recipes Veg New Update " frameborder="0" allowfullscreen> Main Ingredients Onion, Garlic Cuisine Other Cuisines Course Soups Prep Time 6-10 minutes Cook time 21-25 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Caldo Verde Soup 1 Onion roughly chopped 1 tablespoon Garlic minced 2 Potatoes peeled and cut into dices 2 tablespoons Olive oil 2 Sausages cut into roundels 1 cup Spinach shredded to taste Salt to taste Black pepper powder Method Heat 1 tablespoon oil in a deep non-stick pan. Add garlic and sauté for a minute. Add onion and sauté till translucent. Add potatoes, mix well and cook on high heat for a minute. Add 4-5 cups water, stir to mix, cover and boil for 15 minutes. Heat remaining oil in another non-stick pan. Add sausage and shallow-fry till crisp. Drain on absorbent paper and set aside. Transfer cooked mixture in a bowl and blend with a hand blender. Transfer the blended mixture back into the pan, add little water and bring it to a boil. Add spinach and stir to mix. Add salt, pepper powder, mix well and cook for a minute. Add fried sausages and stir to mix. Pour into individual soup bowls and serve piping hot.
