  • White bread slices

  • Processed cheese
    50 grams
  • Spinach leaves blanched and chopped
    25-30
  • Corn kernels
    1/2 cup
  • Butter
    2 tablespoons
  • Refined flour (maida)
    2 tablespoons
  • milk
    2 tablespoons
  • Salt
    to taste
  • Crushed black peppercorns
    to taste
  • A little olive oil to drizzle

Method

Step 1


Melt butter in a non-stick pan, add refined flour and saute till lightly coloured. Add milk and stir continuously to avoid lumps.

Step 2


When the sauce thickens add corn kernels and spinach and mix well. Add salt and crushed black peppercorns and mix well.

Step 3


Put the mixture into a bowl. Grate cheese into the bowl and mix well.

Step 4


Spread the mixture evenly on 4 bread slices, cover with the remaining slices.

Step 5


Drizzle a little olive oil over each sandwich. Toast them in a hot grill till evenly golden on both sides.

Step 6


Cut each sandwich into 2 pieces and serve hot.
