Ingredients

  • 2 tablespoons oil + for shallow frying
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 300 grams chicken mince
  • Salt to taste
  • ½ teaspoon red chilli powder
  • ¾ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 tablespoon chopped fresh coriander leaves
  • 1 teaspoon garam masala
  • 4-5 large potatoes, boiled, peeled and mashed
  • 3 eggs
  • Dried bread crumbs as required
  • 2 burger buns
  • Mint mayo as required
  • Fresh romaine leaves as required
  • Onion slices as required
  • Tomato slices as required

Method

  1. Heat oil in a non-stick pan, add onion and sauté till golden brown. Add ginger-garlic paste and mix, cook for a minute. Add chicken and salt, sauté on high for 3-4 minutes. 
  2. Add red chilli powder, ¼ teaspoon turmeric powder, coriander powder and chopped coriander and mix well. Cook for 4-5 minutes.
  3. Add garam masala and mix well. Cook for 2 minutes and take the pan off the heat. Allow to cool. 
  4. Take the potatoes in a large bowl, add remaining turmeric powder and salt and mix well. 
  5. Take a portion of the mixture, flatten and make a cavity in the centre. Stuff each with a portion of the chicken mixture in it and bring the sides to the centre and seal. Gently flatten to shape like a patty.
  6. Break in the eggs in another bowl, sprinkle salt and whisk using a fork and set aside.
  7. Take dried bread crumbs in a shallow bowl, sprinkle salt and mix well.
  8. Dip each patty into the egg mixture and roll on breadcrumbs. Repeat one more time and dust the extra breadcrumbs.
  9. Heat sufficient oil in a non-stick shallow pan, shallow fry the patties till golden brown and crisp. Drain on an absorbent paper.
  10. Slice the burger bun in half, spread a little mint mayo on the bottom side of the bun, place a few romaine lettuce leaves. Place the prepared patty on top. Place a few onion slices and tomato slices and sprinkle salt. Spread mint mayo on the remaining bun and place it on top of the tomatoes. 
  11. Insert a toothpick in the centre to secure the burger. Serve immediately.
