Ingredients list for Cream Corn and Egg on Toast

  • ½ cup Corn Kernels
  • 2 Eggs
  • 4 Brown bread slices
  • 1 tablespoon Oil
  • 1 tablespoon Ginger finely chopped
  • 1-2 Green chillies finely chopped
  • 1 large Onion finely chopped
  • ¼ teaspoon Turmeric powder
  • to taste Salt
  • 1 tablespoon Fresh coriander leaves finely chopped
  • For garnishing
  • Fresh mint sprigs
  • A spring onion flower

Method

  1. Toast brown bread slices in a toaster till crisp.
  2. Heat oil in a non-stick pan, add ginger and green chillies and sauté for a minute.
  3. Add onion and sauté for 2 minutes. Add turmeric powder, cream corn and salt and mix well.
  4. Break eggs into the pan and mix. Add coriander leaves and mix and cook till the eggs are done.
  5. Place the toasts on a serving plate. Spread the corn mixture on them. Garnish with a mint sprig and a spring onion flower and serve hot.
