Ingredients

  • ¾ cup jaggery powder
  • ½ cup yogurt
  • ¼ cup oil
  • 1 cup whole wheat flour (gehun ka atta)
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • A pinch of cinnamon powder
  • ¼ cup milk
  • Coffee of your choice to serve

Method

  1. Preheat the oven to 180ºC.
  2. Take yogurt in a bowl, Add oil and jaggery powder in 3-4 batches and beat with an electric beater till the jaggery melts and the mixture turns light.
  3. Sift whole wheat flour, baking soda, baking powder and cinnamon powder directly into the bowl and gently fold in.
  4. Add milk and mix till well combined.
  5. Transfer the batter into a 7 x 2 x 3 silicon loaf mould and tap it a few times to remove the air bubbles if any . Place it on a baking tray and bake in the preheated oven for 20-25 minutes.
  6. Bring the tray out of the oven and allow the cake to cool slightly. De-mould and allow to cool completely.
  7. Slice and serve with cups of hot coffee or tea.
