  • Brinjal, Roasted and peeled
    1 large
  • Soya granules, soaked
    1/2 cup
  • Oil
    2 tablespoons
  • Onion seeds (kalonji)
    1/4 teaspoon
  • Cumin seeds
    1 teaspoon
  • Ginger, finely chopped
    2 inch pieces
  • Onions, finely chopped
    2 medium
  • Tomatoes, finely chopped
    3 medium
  • Red chilli powder
    1 1/2 teaspoons
  • Turmeric powder
    1/4 teaspoon
  • Salt
    to taste
  • Fresh coriander leaves, finely chopped
    3 tablespoons
  • Fresh mint leaves
    for garnis

Method

Step 1


Roast the brinjal over direct flame till the skin gets charred. Cool, peel and finely chop or mash it.

Step 2


Heat oil in a non stick kadai. Add kalonji, cumin seeds, ginger, green chillies, onions and sauté lightly.

Step 3


Add tomatoes and cook till pulpy. Add red chilli powder, turmeric powder, salt, brinjal, soya granules, ¼ cup water and mix well.

Step 4


Cook till the soya granules are cooked.Add coriander leaves and mix.

Step 5


Transfer into a serving bowl, garnish with mint leaves and serve hot
