  • French bread
    1
  • Parmesan cheese
    as required
  • Olive oil
    2 tablespoons
  • Garlic cloves finely chopped
    10-12
  • Walnuts toasted
    2 tablespoons
  • Mushrooms finely chopped
    1 cup
  • Raisins
    2 tablespoons
  • Parsley
    a few sprigs
  • Extra virgin olive oil
    100 millilitres

Method

Step 1


Preheat oven at 180° C. Cut the French bread into long slices and toast till they become golden brown.

Step 2


Heat olive oil in a non-stick pan. Add garlic to the pan and sauté till fragrant.

Step 3


Chop walnuts. Add mushrooms to the pan and cook on a high heat.

Step 4


Roughly chop raisins. When mushrooms turn light brown, add raisins and walnuts and mix.

Step 5


Finely chop parsley and add to the mushroom mixture.

Step 6


Rub a garlic clove on each bread slice, place them on a plate.

Step 7


Drizzle extra virgin olive oil and toast them in the preheated oven till crisp.

Step 8


Grate some parmesan cheese over the toasted bread slices.

Step 9


Cover the bread slices with the mushroom mixture.

Step 10


Grate some more parmesan cheese over the mushroom mixture and serve immediately.
