Button Mushroom Salad A vibrant salad of mushrooms, cucumbers, and cherry tomatoes, tossed with olives, fresh basil, and crusty French bread in a balsamic vinaigrette. By Sanjeev Kapoor 05 May 2016 in Recipes Veg New Update Main Ingredients Button mushrooms, Cherry tomatoes Cuisine Fusion Course Salads Prep Time 16-20 minutes Cook time 0-5 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 20 medium button mushrooms, sliced thinly 1 medium cucumber 1 medium onion, sliced 10 cherry tomatoes, halved 5 green olives, sliced 5 black olives, sliced 3 tablespoons olive oil 3 tablespoons balsamic vinegar Salt to taste 7-8 black peppercorns, crushed 3 garlic cloves, chopped 6-7 lettuce leaves 6-8 fresh basil leaves, hand torn 1/4 long French bread Method Halve the unpeeled cucumber, remove part of the seeds and then slice. Take onion and cucumber in a large bowl. Add mushrooms, cherry tomatoes, green olives and black olives and mix. For dressing take olive oil in a bowl. Add balsamic vinegar, salt, crushed black peppercorns and garlic and mix. Tear lettuce leaves and add to the bowl of vegetables. Add hand torn fresh basil leaves and mix. Slice French bread and further break into smaller pieces and add to the vegetables in the bowl. Add the dressing, toss well and serve immediately.
