Moutabel A delicious dip of charred brinjals with aromatic herbs and seasonings served garnished with black olives. This recipe has featured on the show Khanakhazana. By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Brinjals, Garlic Cuisine Middle Eastern Course Pickles, Jams and Chutneys Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients list for Moutabel 4 medium Brinjals Garlic 4 cloves Garlic 2 tablespoons Fresh parsley 3-4 Black olives 1 teaspoon Cumin powder 1/2 teaspoon Black pepper powder to taste Salt 3 tablespoons Tahini sauce 1 tablespoon Lemon juice 1 tablespoon Olive oil Method Remove stem, wash and aubergines with a fork. Roast on direct flame, turning them from time to time, till well charred on all sides. Dip the aubergines in cold water. Peel away the charred skin and remove excess water. Peel, wash and crush garlic. Wash and chop parsley. Slice black olives for garnish. Put aubergines in a blender, add crushed garlic, cumin powder, pepper powder, salt to taste and blend. Add a little parsley and continue to blend. Add tahina sauce and blend. Add lemon juice and olive oil and blend for half a minute. Do not grind it too fine, it should be slightly coarse. Transfer into a bowl. Garnish with sliced black olives. Moutabel is ready.
